Decoctions are like infusions but brewed at hotter temperatures, and often for a longer time.

They are most suited to extracting the ‘tougher’ parts of herbs, i.e. roots, seeds and barks. Simple infusions would not extract all the goodness out of these tough pieces.

To make a decoction, you need around 3 tsp dried or 6 teaspoons fresh herb and a 1 litre of water.

Place the herbs and water in a pan, and cover with a lid.

Bring the herbs to the boil, then turn the heat down.

Simmer the herbs on a gentle heat for 15-20 minutes, strain and drink.
